We are excited to have this amazing coffee from Ecuador on the menu. Juan Peña is a well known producer and this lot highlights those skills. This is a low intervention washed Typica Mejorado variety coffee from the Yunguilla Valley in Ecuador; grown between 1400 and 1700 meters above sea level.

Typica Mejorado is a coffee developed in Ecuador in the 1970s using Ethiopian landrace coffees crossed with the bourbon variety. 

Juan Peña is known for his meticulous processing skills, and this lot typifies that attention to detail. These coffees are selectively harvested, floated and sorted for density prior to processing, depulped, fermented washed, and dried for 9-18 days using an automated drying room management system to carefully ensure stable moisture content and water activity levels. 

The resulting flavor profile is mesmerizing and intricate, with complex sweetness, a decadent soft texture, and long finish.
