Processing: Anaerobic. Typically, during the washing process, coffee is depulped and then soaked in a tank with water to remove any coffee fruit residual, before being dried. Anaerobic processing changes this by soaking the coffee in a tank that is completely sealed from oxygen, resulting in an amazing final product.
This particular coffee was harvested at peak maturity, when the cherry had a sugar content of 22 brix. The cherries were transported in fruit plastic boxes, to conserve their integrity and the majority of mucilage and juices. It was fermented for 96 hours in sealed tanks free of oxygen and air locked to release CO2. The coffee was later taken to raised beds for a period of 30 days until 11% of humidity was reached. Then the coffee spent a Period of 2 months in hermetic bags for rest time precious to the preparation for exporting.

About 29 miles South East from Guatemala City. For Guillermo Juarez and his son, producing coffee has been a family tradition since his great grandfather started in the 1940s. Every year, they aim to improve the quality of their coffee, to satisfy their long term customers and in seeking new ones to share what they love. “To be surrounded by mountains, you have to be passionate about it” is how Guillermo describes one of the many things he loves about this industry. This year Guillermo has been experimenting with Anaerobic Fermentation and we are so excited to share these lots with you!
This coffee is delicate, complex, and floral. We taste notes of tropical fruit, tangerine, and jasmine.
